Curry

Curry powder is a generic term for a mix of spices used in South Asian dishes. There are many different blends of curry powder, like Indian or Thai, so it is made differently anywhere you go. Even though curry is commonly considered to be spicy and hot, the flavor can actually change according to the spices used and there can be many varieties.

Most curry powders are made with four base ingredients: coriander, cumin, fenugreek, and turmeric. Ingredients that can also be found in curry powders include chilies, mustard, ginger, garlic, cloves, cinnamon, caraway, pepper, cardamom, nutmeg, fennel seed, dill seed, or salt.  It is easy to make your own curry powder, which allows you to tweak ingredients to suit your taste. For the best quality and freshness, grind your own whole, quality seeds. 

Curried Egg Salad
2 Tbsp mayonnaise
½ tsp curry powder
pinch celery salt
pinch paprika
½ tsp cumin
½ tsp Dijon mustard
2 Tbsp lemon juice
3 hard-boiled eggs, peeled and chopped
2 Tbsp finely chopped celery
1-2 scallions, chopped
optional: 1-2 Tbsp mango chutney

Combine mayo, curry, celery salt, cumin, mustard and lemon juice in a medium bowl. Gently stir in chopped eggs, celery and scallions. Add mango chutney, if using. Serve with pita bread.
